Ingredients:
2 Apple (180g)
2 large eggs (100g)
1 scoop vanilla protein powder (32g)
5 tbsp cocoa powder (25g)
0.5 tsp baking powder (2g)
0.5 tsp Truvia (or sweetener of choice) (2g)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a small baking dish or line it with parchment paper.
Prepare the Base:
If using an apple: Blend the chopped apple in a food processor or blender until smooth.
If using cottage cheese or tofu: Blend until smooth for a creamy base.
Mix Wet Ingredients:
Add the apple puree (or cottage cheese/tofu) to a mixing bowl.
Whisk in the whole egg and egg white until fully combined.
Combine Dry Ingredients:
In a separate bowl, whisk together the protein powder, cocoa powder, and baking powder.
Slowly add the dry mixture to the wet ingredients, mixing until smooth. If the batter feels too thick, add 1–2 tablespoons of water or milk (almond, oat, or dairy).
Optional Sweetener:
Taste the batter and add a sweetener if desired. Mix well.
Bake:
Pour the batter into the prepared baking dish.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve:
Let the cake cool for 10–15 minutes before slicing.
For extra protein, top with Greek yogurt frosting (Greek yogurt + cocoa powder + sweetener) or sprinkle with chopped nuts or seeds.
