Ingredients:
Salad Base:
1 cup cooked and cooled quinoa
1 cup cooked and cooled baby potatoes, quartered
1 cup cooked green lentils
1 cup fresh spinach, chopped
1/2 cup cherry tomatoes, halved
1/4 cup red onion, finely sliced
1/4 cup cucumber, diced
2 tbsp fresh parsley, chopped
2 tbsp fresh mint, chopped (optional)
Dressing:
3 tbsp olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
1 tsp honey or maple syrup
1 garlic clove, minced
Salt and pepper to taste
Instructions:
Prepare the Ingredients:
Cook the quinoa, potatoes, and lentils separately. Once cooked, cool them in the refrigerator for at least 4 hours or overnight to maximize resistant starch formation.
Chop all the fresh vegetables and herbs.
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey or maple syrup, garlic, salt, and pepper.

In a large mixing bowl, combine the cooled quinoa, potatoes, and lentils with the spinach, cherry tomatoes, red onion, cucumber, parsley, and mint.
Toss and Serve:
