High-Protein Tiramisu with Rice Cakes
High-Protein Tiramisu with Rice Cakes
Here’s a recipe for a healthy, high-protein, and low-calorie version of tiramisu using coffee, rice cakes, Greek yogurt, and other simple ingredients. This version skips the traditional mascarpone and ladyfingers to keep it light while still giving you the tiramisu flavor.

Calories per serving: Approximately: 205
Ingredients:
1/2 cup brewed coffee or espresso (cooled) (118g)
1 cup plain nonfat Greek yogurt (227g)
2 tablespoons Truvia (or sweetener of your choice) (28g)
1 teaspoon vanilla extract (4g)
1/2 scoop (12g) vanilla or unflavored protein powder (optional, for extra protein) (6g)
1 large egg white (optional, for creaminess and fluffiness) (50g)
4 plain rice cakes (use unsalted for best results) (36g)
1 tablespoon unsweetened cocoa powder (for dusting) (3g)
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a small baking dish or line it with parchment paper.
Prepare the Base:
If using an apple: Blend the chopped apple in a food processor or blender until smooth.
If using cottage cheese or tofu: Blend until smooth for a creamy base.
Mix Wet Ingredients:
Add the apple puree (or cottage cheese/tofu) to a mixing bowl.
Whisk in the whole egg and egg white until fully combined.
Combine Dry Ingredients:
In a separate bowl, whisk together the protein powder, cocoa powder, and baking powder.
Slowly add the dry mixture to the wet ingredients, mixing until smooth. If the batter feels too thick, add 1–2 tablespoons of water or milk (almond, oat, or dairy).
Optional Sweetener:
Taste the batter and add a sweetener if desired. Mix well.
Bake:
Pour the batter into the prepared baking dish.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Cool and Serve:
Let the cake cool for 10–15 minutes before slicing.
For extra protein, top with Greek yogurt frosting (Greek yogurt + cocoa powder + sweetener) or sprinkle with chopped nuts or seeds.
This tiramisu has the rich flavor of coffee and cocoa while being light and packed with protein, making it a perfect healthy dessert or snack!
