Blueberry Chia Seed Pudding
Chia seeds are packed with omega-3 fatty acids, fiber, and protein. Combining them with antioxidant-rich blueberries makes for a healthy and delicious breakfast or snack.
Servings: 2
Calories per serving: Approximately: 203
Ingredients:
1 cup unsweetened almond milk (or any milk of your choice)
3 tablespoons chia seeds
1/2 cup fresh or frozen blueberries
1 tablespoon honey or maple syrup (optional, for sweetness)
1/2 teaspoon vanilla extract
A pinch of salt
Fresh blueberries and mint leaves for garnish (optional)
Instructions:
Blend the Blueberries:
If you prefer a smoother texture, blend the blueberries with the almond milk. If you like whole blueberries in your pudding, skip this step.
Combine Ingredients:
In a medium bowl, whisk together the almond milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. If you blended the blueberries, mix them in as well.
Mix Well:
Ensure that the chia seeds are evenly distributed to avoid clumping. Let the mixture sit for about 10 minutes, then give it another good stir to break up any clumps.
Refrigerate:
Cover the bowl and place it in the refrigerator for at least 2 hours, or overnight. The chia seeds will absorb the liquid and expand, creating a pudding-like texture.
Serve:
Once the pudding has thickened, give it a good stir. Serve in individual bowls or jars, topped with fresh blueberries and mint leaves if desired.
Enjoy:
Enjoy this healthy, nutritious pudding as a breakfast option, snack, or even a light dessert!
